老爸先把准备好的鸭掌去掉“指甲”;再在水中浸泡一个钟头左右，以此来去掉鸭掌的血水和腥味;然后将锅里的水烧开，倒入鸭掌焯一下;最后将焯好的鸭掌倒入清水中清洗，倒掉锅里的水。把清洗好后的鸭掌放入锅中，并撒上调料(花椒、桂皮、茴香、辣椒、生抽、蚝油、冰糖……)，加水至没过鸭掌的位置，用大火烧开后，再调小火慢炖一个小时左右，最后以大火收汁。就这样，一盘香气四溢，令我垂涎欲滴的“秘制鸭掌”就大功告成了。每到这时，我都会情不自禁地伸手去偷一只鸭掌解解馋。
